Mandarin-Style Roast Pork

Serves 4 – 6

  • 5 to 8 lbs. pork roast
  • Garlic and onion salts
  • 2 Tablespoons margarine
  • 3/4 cup chopped onion
  • 1 cup red plum preserves
  • 1/2 cup brown sugar
  • 2/3 cup water
  • 2 Tablespoons lemon juice
  • 1/3 cup chili sauce
  • 1/4 cup gluten-free soy sauce
  • 2 teaspoons prepared mustard
  • 3 drops Tabasco
  1. Preheat oven to 325 degrees.
  2. Sprinkle roast generously with garlic and onion salt.
  3. Place fat-side up in roasting pan. Roast for 2 hours or until thermometer registers 185 degrees.
  4. Meanwhile, melt margarine, add onion and cook until tender. Add remaining ingredients; simmer for 15 minutes.
  5. Pour fat off partially cooked roasted pork.
  6. Pour about 1/2 the sauce over meat; continue roasting and basting for about 20 to 30 minutes. Serve extra sauce on the side.
